Say it: kah-nuh-LAY (approximate English pronunciation)

A canelé balances a deeply browned outer shell with a tender, almost custard-like interior. Vanilla and rum give the batter its familiar aroma. Its fluted shape makes it easy to recognize at the bakery counter. Both bite-size and larger versions exist, offering different proportions of crisp crust and soft filling.
