Say it: pah-REE BREST (approximate English pronunciation)

The Paris-Brest turns airy choux pastry into a circular dessert filled with praline cream. A crisp shell contrasts with a rich nut-flavored center, sometimes finished with almonds and powdered sugar. Pastry shops offer individual rings and larger sharing versions. It is a different pastry from a croissant, despite the similarly generous filling.
