Regional specialties
Truffade
Cooked potato pieces combined with fresh cheese in a hearty mountain dish.
Say it: troo-FAHD (approximate English pronunciation)
Truffade pairs potato pieces with melted fresh tome cheese. It shares ingredients with aligot but keeps the potatoes in pieces rather than turning them into a stretchy mash. Associated with Cantal and the surrounding Massif Central, it may accompany meat or be served more simply. The cheese and texture make it different from an ordinary fried-potato side.
