Daube provençale
Meat slowly braised in wine with vegetables and aromatic herbs.
Say it: DOHB proh-vahn-SAHL (approximate English pronunciation)
A Provençal daube combines slow cooking with a wine-based marinade or sauce. Beef is a familiar choice, although other meats also appear. Onions, carrots and aromatics help flavor the braise as the meat becomes tender. The accompanying starch varies, so check whether the menu pairs the stew with pasta, potatoes or another side.
