Say it: kar-boh-NAHD flah-MAHND (approximate English pronunciation)

Carbonnade flamande is a beef braise associated with Flemish food traditions on both sides of the French-Belgian border. Beer flavors the cooking liquid, and some versions use gingerbread to enrich it. The meat becomes tender during the slow preparation. Fries are a familiar accompaniment, but the menu determines what is included with the stew.
